This came about because one of our still-growing tomato plants was laid low by an ambitious but not very dexterous squirrel before the tomatoes themselves could ripen. We then needed something to do with our green friends and decided to adapt an earlier post into something fresh for the summer.
For a large bowl you’ll need 5-6 medium sized green tomatoes (chopped), 1/2 avocado (chopped), 1/2 large onion (chopped), 1 handful of cilantro (chopped), 1/2 jalapeño pepper (chopped), 2 Tbsp lime juice, 2 Tbsp lemon juice, 2 Tbsp white vinegar, 1 Tbsp water, salt and pepper.
In a medium sized bowl combined the green tomatoes, avocado, onion, jalapeño and cilantro. Mix slightly with a large spoon to combine.
Add the lime and lemon juices, vinegar and water. Season with salt and pepper. Combine well, again, with a large spoon.
Pulse through the mixture with an electric hand mixer creating the texture you like – some like it chunky and some like it smooth – you choose. Either way it tastes great with tortilla chips or on tacos and burritos. You pick!
