When you have a basket full of beautiful green tomatillos the best thing to do is make a wonderful green summer salsa. This comes directly from the farm that brings us our CSA basket each week and almost all of it was in season this week. And it couldn’t be easier to make.
For two large bowlfuls you’ll need x8 tomatillos (husks removed), x1 medium white onion, x2 large garlic cloves, x1 jalapeno pepper (cored and deseeded), x1 small handful of cilantro, x1 avocado (pit removed, and scooped out from the skin), x1 Tbsp water, 2 Tbsp lime juice, salt, pepper (and crushed red pepper and/or hot sauce to dial up the heat if you want it).
Cut the tomatillos in half, roughly chop the onion and garlic, scoop the avocado and put all of the above into a food processor or blender. Season to taste. Blend well to desired consistency and serve with tortilla chops, on tacos or on quesadillas or burritos.
