This comes from a handout we got at an outdoor screening sponsored by the state berry association. Yes, admittedly, that’s a bit random. But it’s a very tasty and an easy sauce to add to tacos, salads and just to have with chips.

For this you’ll need: 1 cup fresh blackberries, 1 white onion (chopped), 1 jalapeno chile (unseeded and chopped), juice of 1 orange (or about 1/3 c orange juice), juice of 1 lime (or about 1/4 c lime juice), 1/2 c fresh parsley, 1/4 cup wine vinegar, 1 tsp sugar, 1/2 tsp salt.

Place all items, roughly chopped, into a large bowl. Combine well with a spoon and then use a hand mixer to blend everything together and preserve some of its chunky character. You can put everything into a blender or food processor if you want it to have a consistently smooth appearance. Adjust the sugar and orange juice to make it more sweet or adjust the vinegar and lime juice to make it more tart.
