This is a simple and very tasty way to use kohlrabi and can be added to tacos, burgers and other places where a simple side will brighten the whole meal.

For this you’ll need: 1 kohlrabi bulb (stems removed and peeled), 1 carrot (peeled and chopped), 2-3 spring onions (chopped), 1 ear corn (just the kernels removed with a sharp knife), 1 Tbsp mayonnaise, 2 tsp BBQ sauce (optional), 1 Tbsp white wine or tarragon vinegar, salt.
Grate the peeled kohlrabi into a medium bowl and then squeeze out the excess liquid either by using a strainer and your hands or by placing the shreds onto a couple of paper towels and allowing it to drain.
Place back into the bowl add the mayo, BBQ sauce (if using, it adds a tang and sweetness), vinegar, scallions, carrot and a good grinding of salt.
Combine well with a large spoon and chill for at least half an hour before serving.
