We served this on simple roasted vegetables when we had too many that had to be used. It can also go well as a sandwich spread, dip or just as a side for other things. It’s pretty simple to make and tastes great. Feel free to dial up/down the garlic or lemon juice and/when you feel the urge.

For a small bowl you’ll need: x1 large avocado, 1/4 cup olive oil, x1-2 tsp lemon juice, x1 clove garlic (crushed), salt and pepper.

Cut the avocado in half and scoop out the meat into a food processor. Add lemon juice, garlic, salt and pepper and 1/2 of the olive oil (so, about 1/8 cup). Blend well.

With a rubber spatula, scrape down the sides and add a little more olive oil, and blend again.

Continue this process and/or add in the oil as you blend in small drips, until you are satisfied with the consistency which should resemble mayonnaise.

Add in more salt and/or pepper to your taste and serve.
