In our current exploration of completely plant based food options we went on a friend’s suggestion and sought out this terrific recipe from Tasty.co – and it is so, well, tasty and satisfying that we had to share it

For 2 large or 4 small sliders you’ll need: x1 14 oz can Jack Fruit (drained), 1/2 onion (chopped), x2 cloves garlic (chopped), 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 cup vegetable stock, x2 ciabatta or x4 dinner rolls, 1 cup of your favorite BBQ sauce (you can make your own from a recipe found here), salt, pepper and olive oil.

For the cole slaw you’ll need: 1/3 head of cabbage, 1 carrot (chopped), 3 green onions (chopped), 1/4-1/3 cup vegan Mayo, 1/2-1 Tbsp dijon mustard, 1-2 Tbsp apple cider vinegar, salt and pepper.

Preheat the over to 400.

In an oven ready skillet (cast iron, hopefully), add x3 Tbsp olive oil over medium heat. Add the chopped onion and stir well until just starting to turn translucent – about 2-3 minutes. Add in the chopped garlic and stir to cook until fragrant – another 1-2 minutes. Add in the jack fruit, vegetable stock, cumin, chili and paprika and a good grinding of salt and pepper. Cover the skillet and let simmer over medium/low heat for 15 minutes.

Meanwhile – make the slaw: chop the cabbage into thin strips and place into a large bowl. Add in the chopped carrot and scallions (green onions). In a separate smaller bowl, combine the vegan mayo, mustard, cider vinegar and salt & pepper until smooth. Pour the sauce over the top of the cabbage, carrot and onions and combine well with a wooden spoon.

Remove the skillet with the jack fruit and onions from the heat and gently mash the jack fruit with a potato masher until stringy.

Line a roasting pan with parchment paper and spread the mashed jack fruit mixture into a single layer on the roasting pan. Place into the preheated oven and roast for 25 minutes.

Remove the roasted jack fruit from the oven once it is brown and starting to crisp. Pour the BBQ sauce gently over the top from one end to the other and with a rubber spatula, turn the mixture over so that everything is coated in sauce.

Add BBQ Jack Fruit to the bottom half of the buns and cover with slaw. Place the top half on the bun and enjoy.
