Another recipe garnered through and necessity to use some beautiful autumn vegetables coming in the CSA basket – this time through Buzzfeed’s “Tasty.” This particular version doesn’t look so great in the picture, and we added sausage, but it could not taste any better.

For a mixed bowl as a side for 2-4 people you’ll need: 1/2 lb brussels sprout (stemmed and cut in half), 1 red (or yellow/green) pepper (roughly chopped into 1″ pieces), 1/2 yellow squash (butternut or acorn or similar), 2 Tbsp + 1/4 c olive oil, 1/2 Tbsp unsalted butter, 1 ripe avocado, 1 lime, x2 cloves of garlic (crushed), salt & pepper. We also added x3 links (chopped into 1/4″ slices) of chicken/garlic sausage for a kick of protein.

Preheat the oven to 400.

In a large bowl combine the brussels, peppers and squash. Add x2 Tbsp olive oil and a fair grinding of salt and pepper. Combine well with a large spoon.

Place tin foil over a baking sheet and add just a small amount of olive oil and 1/2 Tbsp butter before placing into the preheated oven for a minute or two (until the butter is just melted).

Remove the tray from the over and spread the vegetable mixture evenly in a single layer. Place back in the oven and bake until golden – about 40 mins.

Meanwhile add avocado, the juice of x1 lime, 1/4c olive oil and crushed garlic cloves into a blend or food processor. Add salt and pepper. Blend well until thick and smooth.

If you want to add sausage to the overall plan – quickly brown the chopped links in a skillet over medium heat until golden – about 6-8 mins. Remove from heat and set aside.

Once veggies are soft and golden, remove from the oven and combine with sausage in a large serving bowl. Add avocado sauce to the top and toss well.

Couldn’t taste better as a meal itself or as a side to your Fall Feast.
